Lemongrass and spearmint tea, sweeten to taste, then chill and serve cool/cold... Or throw some lemongrass in with the mint when making sekanjabin syrup. (These ideas inspired by a new brand of yuppiewater available at the local Giant. Also remember the sekanjabin-oids from Defending the Gate, made with thyme or rosemary INSTEAD of mint. Yum.)

I like lemon balm and spearmint in sekanjabin. I also came up with a pretty good fake for it -- I steeped some mint leaves in red wine vinegar for a couple of weeks, then diluted a couple teaspoons with water and added honey or sugar. Pretty good fake and a whole lot less work.

Hadn't thought about lemon balm -- wonder how well my parents' plant is doing after they had to move it around the corner of the house. Lemongrass has more of a bite though -- I might want to play with the amount of acetic/citric acid when using lemongrass in sekanjabin.

The fake is a good idea for use at home. For events I prefer to have everything but the water in one bottle, so I'd make the syrup.
